Description
The Fedellos do Couto Winery (Adega dos Taboada) defines its project from its name. “Fedellos” means mischievous, restless and “O Couto” refers to the location of the winery, in O Pazo do Couto owned by the Taboada family for several generations, a manor house dating from the s. XII with farms and vineyards located in the extreme south and east of the Ribeira Sacra in the sub-areas of Ribeiras do Sil and Quiroga-Bibei. The philosophy of this winery has been to respect the rural environment and traditional agriculture, which is why they decided to create the winery in 2013 in the Ribeira Sacra, a magnificent environment. They cultivate 4 hectares of autochthonous varieties between the Valle do Bibei and the Sil River and are also collaborating with vine growers in the area. They cultivate in an organic way, introducing principles of biodynamics. After their elaboration experience in the Sierra de Gredos, the Madrid winemakers Curro Bareño and Jesús Olivares have developed the rest of their professional careers in Galicia, straddling Valdeorras and Ribeira Sacra. But it was the impossible vineyards and the limits of the latter region that conquered them to the point of creating their own project in the area together with Luis Taboada, whose family had a vineyard and a historic pazo in Abeleda, on the Orense slope of the Sil River. Using many of the characteristic techniques of Gredos (spontaneous fermentations with grape stalks, long vats periods with hardly any extraction and aging in used woods), they propose an expressive, subtle and very fresh style of wines.
