Description
Adegas Guímaro is located in Sober, in the Amandi sub-area, it is one of the wineries that have promoted the development of terroir wines in the Ribeira Sacra. The young face of the winery, Pedro Manuel Rodríguez, is the heir to a line of winegrowers who for generations have tamed and shaped the area’s steep slopes, a task for which the term heroic viticulture has been coined. The family took a step forward in 1991 with the remodeling and expansion of its small winery with a view to the creation of the Ribeira Sacra D.O that was beginning to be established at that time and which it joined in 1996. The name with which it was baptized the winery, Guímaro, was the nickname of Pedro’s grandfather and it means rebel in Galician. Pedro took the reins of the business in 2001 when it was still focused on the production of young wine, but everything changed after meeting the Bercian oenologist Raúl Pérez. As in many other collaborations that he maintains in Galician wineries, Raúl has advised the development of Guímaro’s wines while making his own labels at his facilities. His arrival marked the change in production techniques (use of natural yeasts, introduction of the stem in fermentation or aging in foudres and large-format barrels). The winery has eight hectares of its own and also buys from local winegrowers. Pedro considers that good work in the vineyard is one of the most lacking aspects in the area after years of following a traditional productive philosophy. He himself admits that it took him between five and seven years to get the winegrowers he works with to change their practices. Adegas Guímaro practices organic and environmentally friendly agriculture. The harvest is done manually and the winemaking is done in a traditional way. Guímaro Mencia is a red wine made by Guímaro Winery within the protection of the regulatory board Ribeira Sacra Designation of Origin. It is a fresh and fruity wine of great quality that is produced with grapes of the Mencía variety mostly and a small contribution of Caiño, Sousón, Merenzao, Brancellao, Garnacha, Mouratón, Negreda. Each vintage may vary slightly in composition. Guimaro Mencia is a very nice wine, subtle, meaty and mature.
