Description
Five winegrowers got together to recover abandoned vineyards, and they are recovering them with the most traditional variety in the area, the Blanco Legítimo, which is a practically exclusive breed in this region, and it was precisely the passion for it that brought them together in this project. Ángel Pedreira Vieiro, José Luis Bouzón Beade, Juan Naveira Presedo, Pablo Fernández Coroas and Ricardo Rilo Rodríguez are 5 entrepreneurs who created Conexión Mandeo Winery with the purpose of recovering old vineyards, growing vines and creating a new wine. They exalt the quality of an ancestral variety whose first strains appeared in Paderne. The Blanco Legítimo has an important potential in the production of dry wines, due to its acidity, it is also valid for making sparkling wines and in years in which the autumn is dry, there is the possibility of making sweet wine, late harvest wines. It is a very versatile grape variety. They do not work with antibiotics because later in the winery they can cause problems in fermentation, since they do not use chemical products to make the wine ferment. They select a part of the harvest to ferment in wooden barrels and another part in steel tanks, and then they assemble these two batches and continue with the aging for a year or so to give the wine more travel. And then they even keep it aging in the bottle so that the wine lasts longer on the market (4 or 5 years). This is how they make their flag wine Alicerce, a monovarietal of Blanco Legítimo with a little touch of Agudelo and Godello grape varieties. The grapes with which Mar Ao Norde is made come from the Os Bancais estate in O Marulo, they are vines over 20 years old planted on shallow shale soils. The wine undergoes spontaneous fermentation with indigenous yeasts in a single 225-litre French oak barrel with temperature control. Subsequently, it is aged for 12 months in the same barrel, before being transferred to a steel tank for a further 3 months. It is bottled without clarifying or filtering and is refined for a further 7 months in the bottle before going on the market. Mar Ao Norde has a limited production of just 400 bottles.
