In the universe of wine, time is a gift. Confirmation of a job well done. That is why Pazo Baión is a unique wine project. Different. That draws on five centuries of history to build a legacy that speaks of culture and architecture, but above all of Albariño wines. After all, the first bibliographical references on the property date from the 15th century, at that time under the ownership of the Lords of Soutomaior. This is a journey that runs through the history of Galicia. From its most powerful families. Like the Figueroa family or the Sarmiento family, owners of the pazo until the 18th century when it passed into the hands of the Counts of Priegue. But it is, above all, a story of incalculable value about the culture of wine in the lands of Breogán. Not in vain, there are documentary testimonies dated 1731 that certify the cultivation of vines on the estate, with total security, Albariño vineyards. A vocation that has been maintained to this day. At the beginning of the 20th century, Don Adolfo Fojo Silva, a wealthy Galician immigrant returned from Argentina, bought the property and started an ambitious renovation of the old pazo. It left behind the sobriety of previous centuries to build the two Victorian-style towers, a winery, dairy farms … At that time; most of the farm’s surface was used for growing cereal and grazing livestock. The wine, however, was still present. The owners maintained a remarkable production to later use it for commercialization. It was in the 70s when the last heirs of Don Adolfo Fojo sold the property to a company that, in addition to installing one of the most modern dairy industries in Galicia, carried out the first technical plantation of Albariño de Rías Baixas. A vineyard that would end up becoming a reference for professionals in the sector. Finally, and after passing through the hands of different owners, on July 16, 2008 Adega Condes de Albarei acquired the Bodega Pazo Baión. The era of greatest splendour was then beginning. A stage characterized by the ambitious project with which the new owners landed. A project based on three fundamental pillars: The production of Albariño wines of extraordinary quality from a concept of “vinos de pago”. The creation of a reference wine tourism centre. The promotion of an ambitious social program. All from an exemplary architectural recovery that would value the countless cultural and historical heritage that can be visited in the 22 hectares of the estate.
