The cradle of Albariño is in Salnés, the subzone of the D.O. Rías Baixas with the greatest oceanic influence. Pazo Cilleiro is located in the municipality of Meis, in the heart of this network of gentle valleys that flow into the estuaries. Very close to the winery, the beautiful Monastery of Armenteira, in the Galician Romanesque style, is the historical testimony of the long connection of these lands with the culture of the vine. Pazo Cilleiro obtains the prized Albariño grapes from a constellation of small vineyard plots spread throughout the entire Salnés region. Altogether there are 80 hectares of vineyards cared for by some 250 independent viticulturists, with whom they maintain a close and long relationship. Most of the vines are grown in pergolas, the traditional conduction system in the area. From their experience, they know that it is ideal for the development and health of the grape and to express the best qualities of the variety. Practical and functional, the Pazo Cilleiro winery has the necessary technology and facilities for quality winemaking. After a first selection in the vineyard, the grapes are harvested under ideal grade and ripeness conditions. Once in the cellar, it is selected again and delicately pressed. The must rests in the cold and is racked for fermentation at a controlled temperature. The wine is then stabilized at a low temperature and aged on fine lees, in order to enrich the aromas of the Albariño grape. The wine remains in the bottle for a few months to settle and refine before it is sold. Pazo Cilleiro Albariño is a 100% Albariño white wine made by the Pazo Cilleiro Winery within the Rias Baixas Designation of Origin. From vineyards aged between 20 and 25 years attached to the winery in the Salnes Valley. The grapes entered the winery in optimal health condition after a careful manual harvest. Fermentation takes place for 14 days in stainless steel tanks. Pazo Cilleiro Albariño was presented to the market after a few weeks of rest in stainless steel tanks and in the bottle.
