Palate: Fresh and salty, with an Atlantic character from start to finish, with hints of tannins, moderate alcohol and a light body that acquires volume and unctuousness in the glass and glides across the palate with sweetness, inviting the next glass.

Adega Saiñas was founded in Ferreira de Pantón in 1992. Property and project of Javier Fernandez, to which Pablo Soldavini joined in 2018. It was born as a hobby that over the years became a passion. Today they are 100% dedicated to the elaboration and production of red wine, the predominant Mencía variety, starting from the conservation and maintenance of the vineyards until the moment of bottling. They are committed to quality, starting from a selected harvest in their own vineyards, combining tradition and the most modern winemaking technology. They have been rewarded with wines that have been recognized in many national and international competitions. Saíñas O Boliño is a spectacular red wine with aging encompassed in the regulatory board of Ribeira Sacra Designation of Origin that is made by Adega Saiñas with 70% of the Mencía and Garnacha Tintorera grape varieties, the rest being Mouratón, Brancellao, Caiño and others. Spontaneous co-fermentation in open 1,000-litre vats, with 100% stems, maceration for 6 weeks and aged for 10 months in 400-litre French oak barrels. Saíñas O Boliño is the result of the collaboration between Pablo Soldavini and Adega Saiñas. The Saíñas O Boliño 2018 vintage received 93 points in the Parker guide.
