Bodega Pateiro is the result of the union between tradition and innovation, they like to experiment and do different things. The Wines of Guarda are not a production method, but a philosophy of consumption where the important thing is the expressiveness that the wine gains over time. The Wines of Guarda are made with a purpose: Its evolution in the bottle. It is not a traditional aging process to add external nuances to the wine. In the Guards the characteristics of the same can be appreciated in its different stages of evolution. We are talking about a development like the one that any person can experience throughout their life. We are not born as adults. That is the philosophy of the Vinos de Guarda. They are wines that are born with a strong and somewhat rebellious personality, like a child or a teenager. To later acquire a personality in the form of nuances, typical of an adult. They are wines that can be consumed when they go on the market, if we like those strong emotions, but that win and reach their optimum moment of consumption at maturity. The result is not “indoctrinated” products but wines with their own personality, without external influences. They go through a tender childhood, a raging adolescence and a delicate and interesting maturity. They have a longer journey than the young, whose effervescence makes them pale with time. They want to change the stereotypes associated with Ribeiro wines. They want to break those preconceived molds, it is their bet. Saramusa is a delicious 100% Treixadura aged white wine made by Bodega Pateiro within the protection of the regulatory board of Ribeiro Designation of Origin. The grapes with which this wine is made come from a 15-year-old vineyard plot and several plots with 20-year-old vines planted on sandy loam soils in the Avia Valley. Fermentation in stainless steel tanks at a controlled temperature of 14ºC. It is marketed after being a minimum of six months in deposits and one month in bottle. Optimal consumption in the 2 years following its harvest.
